Many years ago, in parts of Louisiana, Monday was not only wash day, it also included a lunch of steaming red beans and rice. The beans slow-cooked all day .

DAY 1: Put the beans in a large pot, add hot water to cover, and let soak overnight. DAY 2: Combine seasoning mix ingredients in a small bowl. Drain the beans. Place the bacon in a 5-quart pot over high heat. Cover and cook, uncovering to stir once or twice, until crispy. Add onions, bell peppers, celery, and bay leaves. Scrape the bottom of the pot, cover and cook until the onions are lightly browned, about 3 to 4 minutes.
